Chocolate Covered Peanut Butter Dates

One of my favorite, healthier desserts are these chocolate covered peanut butter dates. These dates come together so easily and seriously taste like a candy bar by the time they’re finished. I like to dip mine in dark chocolate and decorate with milk chocolate, but the possibilities are endless here. You can also put a holiday spin on these by adding festive sprinkles on top.

Dates are super sweet and make great additions to smoothies and desserts. They are rich in fiber (7 grams in a 3.5 oz serving). The fiber content of dates helps to slow blood sugar spikes, ideal for a sweet treat like these! Dates are also antioxidant rich and are an especially good source of flavanoids, caratenoids, and phenolic acid. All of which help to prevent inflammation and promote heart health and lower cancer risk.

To make, first open dates on one side and discard all pits.

Next, smear 1/2-1 tsp peanut butter in each date and close shut. They should look like the pictures below. Freeze for 30 minutes.

Melt chocolate on low heat with coconut oil, stirring frequently. Dip frozen dates with peanut butter in the chocolate and roll around to coat completely. Place on baking sheet lined with parchment paper. Freeze for 30 minutes. You have the option to enjoy the dates as is, or go an additional step by drizzling with more chocolate or even adding festive sprinkles. If you do add a drizzle and/or sprinkles, freeze again until the chocolate is set.

I like to keep mine in the freezer and enjoy frozen. They are still easy to bite into from frozen, but can be kept in the refrigerator if preferred. The texture and taste really is similar to a candy bar. You wouldn’t ever think they were made from a date!

A healthy, sweet treat that tastes just like a frozen candy bar!

Ingredients

  • 1 lb Medjool dates
  • 2 cups chocolate chips
  • 1.5 tbsp coconut oil
  • ½ cup creamy peanut butter
  • additional chocolate/sprinkles for decorating, if desired

Instructions

  1. Open dates on one side and pull out pit. Discard all pits and leave dates split in half.
  2. Smear ½-1 tsp peanut butter on each date and fold back together. The dates should look almost like a hot dog at this step!
  3. Freeze dates with peanut butter for ~30 minutes.
  4. In a small saucepan, melt chocolate chips on low heat with coconut oil, stirring frequently. Dip frozen dates with peanut butter in the chocolate and roll around to coat completely. Place on baking sheet lined with parchment paper.
  5. Once all dates are dipped in chocolate, freeze again for 30 minutes.
  6. At this step you can enjoy the dates, as is. If you would like to make the dates more presentable, I like to drizzle additional melted chocolate on each date for some pizzazz. Sprinkles can also be added on top of the drizzle at this step. Freeze again until chocolate is set.
  7. I recommend storing the dates in the freezer and serving frozen. They taste best frozen to me, but can also be kept in refrigerator.
