Apple Pomegranate Salad

Pomegranate season runs from October to January. This is when you will see fresh pomegranates in your local grocery stores at reasonable prices. Eating seasonal produce isn’t just delicious, but a good way to save money on fresh options. Pomegranates are antioxidant-rich and a great source of fiber and vitamin C. I usually devour pomegranate seeds as, but they look stunning on salads. This recipe was inspired by what was in my fridge and pantry and turned out SO good. You could easily swap the apples for pears, pecans for walnuts, or even goat cheese for the feta. Salad recipes are a great way for beginners to get creative in the kitchen.

Not only are salads incredibly easy to make, but so are salad dressings! This vinaigrette came together in seconds and added the perfect flavor to tie the salad together. For DIY dressings, I simply add all ingredients into a mason jar and shake before serving. You could easily make this dressing ahead of time and store in the fridge until it’s time to eat. If you do not have a mason jar or storage container for dressings, you could simply combine by whisking all ingredients in a small bowl.

Apple Pomegranate Salad

A delicious and gorgeous salad for the holidays, or anytime pomegranates are in season!

Ingredients

Apple Pomegranate Salad
  • 5 oz spinach and arugula mix
  • 3 oz feta cheese
  • ½ cup pomegranate seeds
  • ½ cup chopped pecans
  • 1 large honeycrisp apple chopped
Fresh Vinaigrette
  • Juice of 1 lemon
  • ¼ cup extra virgin olive oil
  • 1 tsp dijon mustard
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Combine all salad ingredients in a large bowl. You may want to add more or less of each topping to make it your own!
  2. Combine all vinaigrette ingredients in a mason jar and shake or whisk together in a small bowl.
  3. Toss and combine when ready to serve!

Notes

Substitutions that would be great depending on preference:


  • pears in place of apples
  • walnuts in place of pecans
  • goat cheese in place of feta cheese
