Apple Pomegranate Salad

A delicious and gorgeous salad for the holidays, or anytime pomegranates are in season!

Ingredients
  

Apple Pomegranate Salad

  • 5 oz spinach and arugula mix
  • 3 oz feta cheese
  • ½ cup pomegranate seeds
  • ½ cup chopped pecans
  • 1 large honeycrisp apple chopped

Fresh Vinaigrette

  • Juice of 1 lemon
  • ¼ cup extra virgin olive oil
  • 1 tsp dijon mustard
  • ½ tsp salt
  • ½ tsp pepper

Instructions
 

  • Combine all salad ingredients in a large bowl. You may want to add more or less of each topping to make it your own!
  • Combine all vinaigrette ingredients in a mason jar and shake or whisk together in a small bowl.
  • Toss and combine when ready to serve!

Notes

Substitutions that would be great depending on preference:
pears in place of apples
walnuts in place of pecans
goat cheese in place of feta cheese
