If you have followed me for a while now, you know that I love to garden in the summer. I started gardening out of 5 gallon buckets during quarantine and my love for gardening has only grown since. When I noticed I had an abundant supply of parsley, I knew I wanted to create a recipe that would help me use it up. This recipe is packed full of nutrition. Parsley is rich in antioxidant flavonoids and vitamin C, which play a protective role in cancer prevention.
This sauce goes great on buddha bowls, salads, and even with tortilla chips. Be sure to let me know if you try this recipe!

Lemon Parsley Sauce
A refreshing sauce that can be anything from dressings to dip.
Ingredients
- 1 cup greek yogurt plain
- ½ cup extra virgin olive oil
- ⅔ cup fresh parsley stems removed
- 1 tsp salt
- juice of 1 large lemon or 2 small lemons
Instructions
- Combine all ingredients into a blender or food processor and blend thoroughly. Serve chilled.
