This is one of my favorite salad recipes. It is so simple and quick to throw together.
For the base of the salad, I always use the bagged Simply Nature Chopped Kale from Aldi. I then toss the kale with Primal Kitchen Caesar Dressing. To top the salad off, I add parmesan cheese and my very own roasted chickpeas (see recipe below). These are great on salads because they double as a protein source + crouton. Be sure to let me know if you try it at home!
The Best Roasted Chickpeas
These chickpeas are beyond versatile. Whether you eat them straight up as a snack or add them to your favorite salad, you won't be disappointed.
- 1 can chickpeas drained, rinsed, and patted dry with towel
- 2 tbsp avocado oil
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- Preheat oven to 375° F.
- Toss chickpeas with oil, paprika, garlic, salt, and pepper.
- Spread chickpeas onto lined or greased baking sheet and roast in oven 25-30 minutes. Be sure to shake the pan halfway through.
- Let cool and enjoy!
- By drying off the chickpeas with a clean towel or paper towel, this allows for the oil and seasonings to stick better and ensure proper flavoring.
